4 cups mixed winter greens (kale, spinach, and arugula)
1 cup cherry tomatoes, halved
1 small red onion, thinly sliced
1 avocado, diced
1 cup snowflake-shaped tortilla chips
1/2 cup fresh homemade salsa (see instructions)
1 tablespoon olive oil
1 teaspoon lime juice
Salt and pepper to taste
Instructions
Prepare the fresh homemade salsa by combining 2 diced tomatoes, 1/4 cup diced onion, 1 minced jalapeño, 2 tablespoons chopped cilantro, 1 tablespoon lime juice, and salt to taste in a bowl. Mix well and set aside.
In a large salad bowl, combine the mixed winter greens, cherry tomatoes, red onion, and avocado.
Drizzle the olive oil and lime juice over the salad, and toss gently to coat evenly.
Add the fresh homemade salsa and toss lightly to combine all flavors.
Just before serving, sprinkle the snowflake tortilla chips on top to maintain their crunch.
Season with additional salt and pepper if desired and serve immediately.
Notes
For extra protein, add grilled chicken or black beans to make this salad more filling and nutritious.
