Comforting Bowl of White Lasagna Soup

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, removed from casings
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1 (15 ounce) container ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon red pepper flakes (optional)
  • 6 ounces lasagna noodles, broken into small pieces
  • 5 ounces fresh spinach, chopped
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in chicken broth and bring to a simmer.
  4. In a medium bowl, combine ricotta cheese, Parmesan cheese, nutmeg, and red pepper flakes (if using). Set aside.
  5. Add lasagna noodles to the pot and cook according to package directions, or until tender.
  6. Stir in spinach and cook until wilted, about 2 minutes.
  7. Reduce heat to low. Stir in heavy cream and ricotta cheese mixture until well combined and heated through. Do not boil.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley before serving.
