Vegan Poke Bowl

A fresh and vibrant Vegan Poke Bowl featuring marinated tofu, colorful vegetables, and a flavorful sesame-soy dressing, perfect for a healthy, satisfying meal.

Ingredients

  • 1 block firm tofu, drained and cubed
  • 2 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp maple syrup
  • 2 cups cooked sushi rice
  • 1 cup cucumber, diced
  • 1 cup edamame, shelled
  • 1 avocado, sliced
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • 1 tbsp sesame seeds
  • 1 sheet nori, cut into strips
  • 1 tbsp pickled ginger (optional)
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess moisture, then cut into bite-sized cubes.
  2. In a bowl, mix soy sauce, sesame oil, rice vinegar, and maple syrup to create the marinade.
  3. Gently toss tofu cubes in the marinade and let sit for at least 15 minutes.
  4. Prepare the sushi rice according to package instructions and let cool.
  5. Assemble the bowl by placing a base of sushi rice in each serving bowl.
  6. Arrange marinated tofu, cucumber, edamame, avocado slices, shredded carrots, and green onions on top of the rice.
  7. Sprinkle sesame seeds and nori strips over the bowl.
  8. Add pickled ginger on the side if using.
  9. Season with salt and pepper as desired and serve immediately.

Notes

For extra crunch, add some toasted macadamia nuts or swap tofu with marinated tempeh for a different texture.
