Turmeric Ginger Chicken Noodle Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 2 large carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup egg noodles
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until translucent.
  2. Stir in grated ginger and turmeric, cooking for 1 minute until fragrant.
  3. Add carrots and celery, cook for 3-4 minutes until slightly tender.
  4. Pour in chicken broth and bring to a boil.
  5. Add shredded chicken and noodles, reduce heat to simmer and cook for 8-10 minutes until noodles are tender.
  6. Season with salt and pepper.
  7. Remove from heat and stir in fresh parsley before serving.

Notes

For extra warmth and flavor, add a squeeze of fresh lemon juice or a pinch of chili flakes when serving.
