Turmeric Chicken Soup

A warming and nourishing turmeric chicken soup infused with aromatic spices and fresh ingredients, perfect for boosting immunity and soothing the soul.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 4 cups low-sodium chicken broth
  • 2 cups cooked shredded chicken
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup chopped kale or spinach
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice
  • Fresh cilantro or parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic, grated ginger, turmeric, and cumin. Cook for 1-2 minutes until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Add sliced carrots and celery. Reduce heat and simmer for 10 minutes until vegetables are tender.
  5. Stir in shredded chicken and chopped kale or spinach. Cook for another 5 minutes until greens are wilted and chicken is heated through.
  6. Season with salt, pepper, and fresh lemon juice.
  7. Serve hot, garnished with fresh cilantro or parsley.

Notes

For added richness, stir in a splash of coconut milk or top with a dollop of plain yogurt before serving.
