Ingredients

Scale
  • 1 lb lean ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper to taste
  • Fresh cilantro or parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add diced onion and cook until softened, about 3-4 minutes.
  2. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Add ground turkey to the skillet, breaking it apart with a spoon, and cook until browned and no longer pink, about 6-7 minutes.
  4. Stir in chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Cook for 1 minute to toast the spices.
  5. Add diced tomatoes, tomato paste, kidney beans, black beans, and chicken broth. Stir well to combine.
  6. Bring the mixture to a simmer, reduce heat to low, and let it cook uncovered for 20-25 minutes, stirring occasionally, until the chili thickens and flavors meld.
  7. Adjust seasoning if needed. Serve hot, garnished with fresh cilantro or parsley.

Notes

For added richness, top with shredded cheese, a dollop of sour cream, or avocado slices. Serve with cornbread or over rice for a complete meal.
