Tomato Basil Noodle Soup

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 4 large ripe tomatoes, chopped
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup egg noodles
  • 1/4 cup fresh basil leaves, chopped
  • Optional: grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional 1 minute until fragrant.
  3. Stir in chopped tomatoes, vegetable broth, sugar, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Using an immersion blender, blend the soup until smooth (or carefully transfer to a blender in batches).
  5. Return soup to the pot if needed, then add egg noodles. Cook until noodles are tender, about 7-8 minutes.
  6. Stir in chopped fresh basil just before serving.
  7. Ladle soup into bowls and garnish with grated Parmesan if desired. Serve warm.

Notes

For a creamier texture, stir in a splash of heavy cream or coconut milk before adding the basil. Serve with crusty bread for a complete meal.
