Tomato Basil Baked Chicken

A flavorful and easy-to-make baked chicken dish featuring fresh tomatoes and aromatic basil, perfect for a wholesome weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the chicken breasts in a baking dish and season both sides with salt, pepper, oregano, and red pepper flakes if using.
  3. In a bowl, combine cherry tomatoes, minced garlic, chopped basil, olive oil, and Parmesan cheese.
  4. Spread the tomato and basil mixture evenly over the chicken breasts.
  5. Bake uncovered for 25–30 minutes, or until the chicken is cooked through and the juices run clear.
  6. Remove from the oven and let rest for 5 minutes before serving.

Notes

For extra flavor, serve this dish over a bed of cooked quinoa or whole-grain pasta and garnish with additional fresh basil leaves.
