Thai Peanut Salad

A vibrant and refreshing Thai Peanut Salad combining crisp vegetables with a creamy, flavorful peanut dressing for a light and satisfying meal.

  • 2 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 large carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup chopped roasted peanuts
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon grated fresh ginger
  • 1 garlic clove, minced
  • 2 tablespoons warm water
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. In a large bowl, combine shredded green and red cabbage, carrot, red bell pepper, cilantro, and green onions.
  2. In a separate small bowl, whisk together peanut butter, soy sauce, lime juice, honey, grated ginger, minced garlic, warm water, sesame oil, and red pepper flakes until smooth and creamy.
  3. Pour the peanut dressing over the mixed vegetables and toss thoroughly to coat all the ingredients evenly.
  4. Sprinkle chopped roasted peanuts on top just before serving for added crunch.
  5. Serve immediately or chill in the refrigerator for 15-20 minutes to let flavors meld.

Notes

For a heartier salad, add grilled chicken or tofu. Garnish with extra lime wedges for a zesty kick.
