This Sweet Chili Chicken Bowl combines tender chicken with a flavorful sweet and spicy chili sauce served over fluffy rice and fresh vegetables for a quick, satisfying meal.

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 2 cups cooked jasmine rice
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 1/2 cup sliced green onions
  • 1 cup steamed broccoli florets
  • 1 tablespoon sesame seeds (optional)
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes.
  3. Stir in the sweet chili sauce and soy sauce, coating the chicken evenly. Cook for another 2-3 minutes until sauce is heated through.
  4. Meanwhile, prepare the vegetables: steam broccoli and slice bell pepper, carrots, and green onions.
  5. To assemble, divide cooked jasmine rice into bowls.
  6. Top rice with the sauced chicken and arrange vegetables on the side.
  7. Garnish with sesame seeds and sliced green onions.
  8. Serve immediately and enjoy!

Notes

For extra flavor, garnish with fresh cilantro or a squeeze of lime. You can also add a fried egg on top for added protein.
