Southern-Style Black-Eyed Peas

  • 1 lb dried black-eyed peas
  • 6 cups water
  • 1 smoked ham hock
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons olive oil
  • 2 bay leaves
  • 1 teaspoon smoked paprika
  • Chopped fresh parsley for garnish

Instructions

  1. Rinse the black-eyed peas thoroughly and remove any debris.
  2. In a large pot, heat olive oil over medium heat and sauté chopped onion and garlic until translucent.
  3. Add the black-eyed peas, water, smoked ham hock, bay leaves, smoked paprika, salt, pepper, and crushed red pepper flakes (if using).
  4. Bring the mixture to a boil, then reduce heat to low and cover.
  5. Simmer for 1 to 1.5 hours, or until peas are tender, stirring occasionally and adding water if needed.
  6. Remove the ham hock, shred any meat, and return it to the pot.
  7. Discard the bay leaves, adjust seasoning to taste, and garnish with chopped parsley before serving.

Notes

For added flavor, serve with hot sauce or over steamed white rice.
