These Southern Honey Butter Cornbread Poppers are bite-sized, sweet-and-savory treats perfect as a snack or side dish, combining classic cornbread flavors with a luscious honey butter glaze.

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 cup fresh corn kernels
  • 1/2 cup shredded sharp cheddar cheese
  • For the honey butter glaze:
  • 4 tablespoons unsalted butter, softened
  • 3 tablespoons honey
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Line a mini muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, combine buttermilk, eggs, and melted butter; beat until smooth.
  4. Pour wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in fresh corn kernels and shredded cheddar cheese gently.
  6. Divide the batter evenly into the prepared mini muffin tin, filling each about 3/4 full.
  7. Bake for 15-18 minutes, or until golden brown and a toothpick inserted comes out clean.
  8. While the poppers bake, prepare the honey butter glaze by mixing softened butter, honey, and salt until smooth.
  9. Remove the poppers from the oven and let them cool for 5 minutes in the tin, then brush generously with the honey butter glaze.
  10. Serve warm and enjoy!

Notes

For an extra kick, sprinkle a bit of cayenne pepper into the honey butter glaze or serve the poppers with a side of spicy jam.
