  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 cup chicken broth
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 medium red onion, thinly sliced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place chicken breasts into the slow cooker.
  2. In a small bowl, whisk together olive oil, garlic, lemon juice, lemon zest, oregano, thyme, salt, and pepper.
  3. Pour the olive oil mixture over the chicken, ensuring all pieces are coated.
  4. Add chicken broth, olives, sun-dried tomatoes, and red onion on top of the chicken.
  5. Cover and cook on low for 4-5 hours or until the chicken is tender and cooked through.
  6. Remove chicken and let rest for a few minutes before serving.
  7. Garnish with fresh parsley and serve with your choice of side, such as rice or roasted vegetables.

For extra flavor, add a sprinkle of feta cheese just before serving or serve with warm pita bread on the side.
