  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/2 cup chopped red onion
  • 1/2 cup pitted Kalamata olives, halved
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh parsley for garnish

Instructions

  1. Place chicken breasts in the slow cooker in a single layer.
  2. In a bowl, whisk together olive oil, garlic, lemon juice and zest, oregano, thyme, rosemary, salt, and pepper.
  3. Pour the herb and lemon mixture over the chicken breasts, ensuring they are well coated.
  4. Add chicken broth, chopped red onion, and Kalamata olives on top of the chicken.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  6. Before serving, sprinkle with crumbled feta cheese and fresh parsley.
  7. Serve warm with rice, potatoes, or a fresh Greek salad.

Notes

For extra flavor, marinate the chicken in the herb mixture for 1-2 hours before slow cooking. Serve with tzatziki sauce for a traditional Greek touch.
