  • 2 lbs beef chuck roast, cut into chunks
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium-high heat and brown the beef chunks on all sides, about 3-4 minutes per side.
  2. Transfer the browned beef to the slow cooker.
  3. In the same skillet, melt butter and sauté the minced garlic until fragrant, about 1-2 minutes.
  4. Pour the garlic butter mixture over the beef in the slow cooker.
  5. Add beef broth, Worcestershire sauce, dried thyme, salt, and black pepper to the slow cooker and stir gently to combine.
  6. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and easily shredded.
  7. Before serving, shred the beef with two forks and mix well with the cooking juices.
  8. Garnish with chopped fresh parsley and serve hot.
