Sausage and Courgette Pasta

A hearty and flavorful pasta dish combining savory sausage with fresh courgettes, perfect for a quick and satisfying weeknight meal.

  • 200g pasta (penne or rigatoni)
  • 2 sausages (about 200g), sliced
  • 1 large courgette, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced sausages and cook until browned and cooked through, about 5-7 minutes.
  3. Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
  4. Add the sliced courgette and cook for 4-5 minutes until tender but still crisp.
  5. Return the cooked pasta to the skillet and toss everything together to combine.
  6. Season with salt and pepper to taste, then sprinkle with grated Parmesan cheese.
  7. Serve hot, garnished with fresh basil leaves if desired.

Notes

For extra flavor, try adding a pinch of red chili flakes or a squeeze of lemon juice before serving.
