  • 8 cups day-old French bread, cubed
  • 1 ½ cups pumpkin puree
  • 6 large eggs
  • 2 cups whole milk
  • ½ cup heavy cream
  • ¾ cup brown sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup chopped pecans (optional)
  • Powdered sugar and maple syrup for serving

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together pumpkin puree, eggs, milk, heavy cream, brown sugar, pumpkin pie spice, vanilla extract, cinnamon, and salt until smooth.
  3. Add cubed bread to the mixture and gently toss until all bread is soaked. Let sit for 10 minutes to absorb.
  4. Pour the mixture into the prepared baking dish. Sprinkle chopped pecans evenly on top, if using.
  5. Bake uncovered for 45-50 minutes until the top is golden and the custard is set.
  6. Remove from oven and let cool slightly before serving.
  7. Serve warm topped with powdered sugar and maple syrup if desired.

Notes

For a dairy-free version, substitute almond or oat milk and coconut cream. Adding a drizzle of caramel sauce enhances the autumn flavors.
