This classic prime rib roast is seasoned simply and roasted to perfection for a juicy and flavorful centerpiece. Perfect for holidays or special occasions, it’s sure to impress your guests.

Ingredients

Scale
  • 1 (4-5 pound) prime rib roast
  • 2 tablespoons olive oil
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme

Instructions

  1. Preheat oven to 450°F (232°C).
  2. Pat the prime rib roast dry with paper towels.
  3. In a small bowl, combine olive oil, salt, pepper, garlic powder, onion powder, rosemary, and thyme.
  4. Rub the mixture evenly over the entire roast.
  5. Place the roast in a roasting pan with the rib bones facing down.
  6. Roast for 15 minutes, then reduce the oven temperature to 325°F (163°C).
  7. Continue roasting for approximately 13-15 minutes per pound for medium-rare (130-135°F), 15-17 minutes per pound for medium (135-140°F), or 17-20 minutes per pound for medium-well (140-145°F). Use a meat thermometer to ensure accurate doneness.
  8. Remove the roast from the oven and let it rest for at least 20 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful roast.
  9. Carve the roast against the grain and serve immediately.

Notes

Serve with horseradish sauce, au jus, or your favorite sides for a complete and satisfying meal. For extra flavor, you can sear the roast in a hot skillet on all sides before roasting.
