Sweet, spicy, and unexpectedly addictive, Pineapple Cowboy Candy is candied pineapple slices infused with a smoky chili kick. These candied pineapple slices are perfect as a unique snack or a flavorful addition to your charcuterie board.

  • 1 fresh pineapple, peeled, cored, and sliced into ¼-inch thick rings
  • 1 cup granulated sugar
  • ½ cup water
  • ¼ cup apple cider vinegar
  • 2 tablespoons chili powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon cayenne pepper (or more, to taste)
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 225°F (107°C). Line a baking sheet with parchment paper.
  2. In a large saucepan, combine sugar, water, apple cider vinegar, chili powder, smoked paprika, cayenne pepper, and salt. Bring to a simmer over medium heat, stirring until sugar is dissolved.
  3. Add pineapple slices to the simmering syrup. Cook for 30-40 minutes, flipping the slices halfway through, until they become slightly translucent and the syrup has thickened.
  4. Carefully remove the pineapple slices from the syrup and arrange them in a single layer on the prepared baking sheet.
  5. Bake for 1-1.5 hours, flipping the slices every 30 minutes, until they are slightly dried and sticky. Watch carefully to prevent burning.
  6. Remove from the oven and let cool completely on the baking sheet. The pineapple candy will firm up as it cools.
  7. Store in an airtight container at room temperature.

Notes

Serve Pineapple Cowboy Candy as a standalone snack, on a charcuterie board, or as a topping for grilled meats or tacos. For extra heat, add a pinch of red pepper flakes to the syrup.
