Enjoy all the classic flavors of a Philly cheesesteak in a comforting soup! This creamy and savory soup is packed with tender beef, onions, peppers, and a cheesy broth.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound sirloin steak, thinly sliced
  • 1 large onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 8 ounces cream cheese, softened
  • 1 cup shredded provolone cheese
  • Optional: crusty rolls for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add steak and cook until browned, about 5-7 minutes. Remove steak from pot and set aside.
  2. Add onion and bell peppers to the pot and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  3. Pour in beef broth, Worcestershire sauce, thyme, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Stir in cream cheese until melted and smooth.
  5. Add steak back to the pot and stir in provolone cheese until melted.
  6. Serve hot, garnished with extra cheese or crusty rolls, if desired.

Notes

For an extra creamy soup, use a hand blender to partially blend the soup before adding the steak and provolone. Serve with crusty bread for dipping.
