One-Pot Veggie Cream Orzo

A creamy and comforting one-pot orzo dish loaded with fresh vegetables, perfect for a quick and nutritious meal.

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup zucchini, diced
  • 1 cup spinach, chopped
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant and translucent.
  2. Add mushrooms and zucchini, cook for 5 minutes until tender.
  3. Pour in the orzo and stir to coat with oil and veggies.
  4. Add vegetable broth, bring to a boil, then reduce heat and simmer uncovered for 8-10 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed.
  5. Stir in heavy cream, Parmesan cheese, and spinach. Cook for another 2-3 minutes until spinach wilts and the mixture is creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

For added protein, stir in cooked chickpeas or shredded rotisserie chicken before serving.
