one-pot red beans and rice

A comforting and flavorful one-pot red beans and rice recipe that’s perfect for a hearty weeknight dinner, combining tender beans with fragrant spices and fluffy rice.

  • 1 cup dried red beans, rinsed
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 cups vegetable broth
  • 1 cup long-grain white rice, rinsed
  • 2 green onions, sliced (for garnish)
  • Hot sauce (optional)

Instructions

  1. Soak the red beans in water overnight or for at least 8 hours. Drain and rinse before cooking.
  2. Heat olive oil in a large pot over medium heat. Add onion, green bell pepper, and celery; cook until softened, about 5 minutes.
  3. Add garlic, smoked paprika, thyme, cayenne, black pepper, and salt. Stir and cook for 1 minute until fragrant.
  4. Add the drained beans and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer, covered, for 1 hour or until beans are tender.
  5. Stir in the rinsed rice, ensuring it is evenly distributed. Cover and cook for another 20 minutes or until the rice is cooked and liquid absorbed.
  6. Remove from heat and let sit covered for 5 minutes. Fluff the rice and beans with a fork.
  7. Garnish with sliced green onions and serve hot with hot sauce if desired.

Notes

For extra depth of flavor, add smoked sausage slices in step 2 or serve with a side of crusty bread.
