No Bake Carrot Cake Bites

Delight in these naturally sweet, no bake carrot cake bites packed with warm spices and wholesome ingredients—perfect for a healthy snack or dessert.

  • 1 cup finely shredded carrot
  • 1 cup pitted dates
  • 1 cup walnuts
  • 1/2 cup rolled oats
  • 1/4 cup shredded unsweetened coconut
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: 2 tablespoons maple syrup for extra sweetness

Instructions

  1. Place the walnuts and rolled oats in a food processor and pulse until finely ground.
  2. Add the shredded carrot, pitted dates, shredded coconut, cinnamon, nutmeg, ginger, vanilla extract, and salt to the processor.
  3. Process until the mixture comes together and is sticky enough to form into balls. If too dry, add maple syrup gradually.
  4. Roll the mixture into 1-inch bite-sized balls and place onto a parchment-lined tray.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the fridge for up to 1 week.

Notes

For a fun twist, roll the bites in extra shredded coconut or finely chopped nuts before chilling.
