  • 1 small onion, finely chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt

  • 1 tablespoon apple cider vinegar
  • 1/2 cup vegetable broth or water

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and red pepper flakes, cooking for another 1 minute until fragrant.
  4. Add the chopped mustard greens to the skillet and stir to combine.
  5. Pour in the vegetable broth, sprinkle salt and black pepper, then cover and simmer for 8-10 minutes, stirring occasionally, until the greens are tender.
  6. Remove the lid, increase heat to medium-high, and cook for another 2 minutes to reduce excess liquid.
  7. Turn off heat and drizzle apple cider vinegar over the greens; stir well to incorporate.
  8. Serve warm as a flavorful side dish.

Notes

For a smoky flavor, add a small piece of smoked ham or bacon while sautéing the onions, or finish with a sprinkle of toasted sesame seeds.
