Mint Oreo Brownies

Delight in these rich, fudgy Mint Oreo Brownies that combine classic chocolate brownie texture with a refreshing mint twist and crunchy Oreo pieces for a decadent dessert experience.

  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 tsp salt
  • 1 cup chopped Mint Oreos (approximately 15 cookies)
  • 1/2 cup semi-sweet chocolate chips
  • Optional: 1/4 tsp peppermint extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the melted butter and granulated sugar until smooth and combined.
  3. Add eggs one at a time, beating well after each addition, then stir in the vanilla extract and peppermint extract if using.
  4. In a separate bowl, sift together the flour, cocoa powder, and salt.
  5. Gradually fold the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
  6. Fold in the chopped Mint Oreos and chocolate chips evenly throughout the batter.
  7. Pour the batter into the prepared pan and spread it evenly.
  8. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Allow the brownies to cool completely in the pan before cutting into squares.

Notes

For an extra minty kick, sprinkle crushed Mint Oreos on top before baking or drizzle melted mint chocolate over the cooled brownies.
