Ingredients

Scale
  • 200g feta cheese or halloumi, cut into cubes
  • 1/2 cup extra virgin olive oil
  • 2 cloves garlic, thinly sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red chili flakes (optional)
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon whole black peppercorns

Instructions

  1. Place the cheese cubes in a sterilized glass jar or container.
  2. In a bowl, combine olive oil, sliced garlic, oregano, thyme, red chili flakes, black pepper, lemon juice, and black peppercorns.
  3. Pour the marinade over the cheese ensuring all pieces are well coated.
  4. Seal the jar and refrigerate for at least 24 hours to allow flavors to infuse.
  5. Before serving, bring the marinated cheese to room temperature and sprinkle fresh parsley on top.
  6. Serve as an appetizer or with crusty bread and olives.

Notes

For an extra burst of flavor, add a few sprigs of fresh rosemary or a dash of balsamic vinegar to the marinade. Marinated cheese pairs beautifully with fresh bread and a crisp white wine.
