Luxe Cranberry Tiramisu

Indulge in this elegant Luxe Cranberry Tiramisu featuring layers of creamy mascarpone, tart cranberries, and delicate ladyfingers soaked in espresso, perfect for festive occasions.

  • 1 cup fresh cranberries
  • 1/2 cup sugar, divided
  • 1/4 cup water
  • 1 cup strong espresso, cooled
  • 3 tbsp coffee liqueur (optional)
  • 3 large egg yolks
  • 1/2 cup granulated sugar
  • 8 oz mascarpone cheese, softened
  • 1 cup heavy cream
  • 24 ladyfinger cookies
  • 1 tsp vanilla extract
  • Unsweetened cocoa powder, for dusting

Instructions

  1. In a small saucepan, combine cranberries, 1/4 cup sugar, and water. Cook over medium heat until cranberries burst and mixture thickens. Remove from heat and let cool.
  2. Mix espresso and coffee liqueur in a shallow dish; set aside.
  3. In a heatproof bowl, whisk egg yolks with remaining 1/4 cup sugar. Place over simmering water and whisk until mixture thickens and doubles in volume. Remove and let cool.
  4. Whip mascarpone with vanilla extract until smooth.
  5. In a separate bowl, whip heavy cream to stiff peaks. Gently fold whipped cream into mascarpone mixture, then fold in the cooled egg yolk mixture to create the tiramisu cream.
  6. Quickly dip ladyfingers into the espresso mixture and layer them in the bottom of a serving dish.
  7. Spread half of the tiramisu cream over the ladyfingers and spoon half of the cranberry compote on top.
  8. Add another layer of dipped ladyfingers, followed by the remaining cream and cranberry compote.
  9. Cover and refrigerate for at least 4 hours, preferably overnight.
  10. Before serving, dust the top with unsweetened cocoa powder.

Notes

For an extra touch of luxury, garnish with fresh cranberries and a sprinkle of white chocolate shavings before serving.
