loaded baked potatoes

Loaded baked potatoes are crispy on the outside and fluffy inside, topped with savory cheese, crispy bacon, sour cream, and fresh chives for a hearty and delicious comfort meal.

  • 4 large russet potatoes
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons butter
  • 1/4 cup chopped green onions or chives
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub potatoes clean and prick them several times with a fork.
  3. Rub each potato with butter and sprinkle with salt.
  4. Bake potatoes directly on the oven rack for 45-60 minutes, until tender when pierced with a fork.
  5. Remove potatoes from oven, let cool slightly, then cut a lengthwise slit on top.
  6. Carefully scoop out some of the potato flesh into a bowl, leaving a thin shell.
  7. Mix the scooped potato with butter, sour cream, half the cheese, salt, and pepper.
  8. Fill potato shells with the mixture, then top with remaining cheese and crumbled bacon.
  9. Return loaded potatoes to the oven and bake for an additional 10 minutes, until cheese is melted and bubbly.
  10. Garnish with chopped green onions or chives before serving.

Notes

For extra creaminess, stir in some cream cheese or Greek yogurt into the potato mixture before baking.
