Lemon and Sweet Raspberry Bars

These Lemon and Sweet Raspberry Bars combine a zesty lemon base with a burst of fresh raspberries for a delightful, tangy-sweet treat perfect for dessert or snack time.

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 cup fresh raspberries
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, combine 1 cup flour, powdered sugar, and salt. Cut in the softened butter until mixture resembles coarse crumbs. Press evenly into the prepared pan.
  3. Bake crust for 15 minutes, until lightly golden. Remove from oven.
  4. In another bowl, whisk together eggs, granulated sugar, 2 tablespoons flour, lemon juice, and lemon zest until smooth.
  5. Gently fold in fresh raspberries.
  6. Pour lemon-raspberry mixture over the warm crust and return to oven.
  7. Bake for an additional 20–25 minutes, or until the filling is set.
  8. Allow bars to cool completely in the pan, then refrigerate for at least 1 hour before slicing.
  9. Dust with powdered sugar if desired and serve chilled.

For an extra burst of flavor, serve these bars with a dollop of whipped cream or a scoop of vanilla ice cream.
