Jam donut focaccia is a delightful fusion of fluffy focaccia bread filled with sweet, fruity jam, offering a perfect balance of soft texture and jammy sweetness in every bite.

  • 3 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 cup warm water (110°F/45°C)
  • 2 tbsp sugar
  • 1 tsp salt
  • 3 tbsp olive oil, plus extra for drizzling
  • 1/2 cup fruit jam (strawberry or raspberry recommended)
  • Powdered sugar for dusting

Instructions

  1. In a large bowl, dissolve yeast and sugar in warm water; let sit for 5 minutes until foamy.
  2. Add flour, salt, and 3 tablespoons olive oil to the yeast mixture and mix until a sticky dough forms.
  3. Knead the dough on a floured surface for about 8 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour, until doubled in size.
  5. Punch down the dough and roll it out into a rectangle about 1/2-inch thick.
  6. Spread small dollops of jam evenly across half of the dough, then fold the other half over, sealing edges gently.
  7. Transfer to a baking sheet lined with parchment, gently pressing and stretching to about 3/4-inch thickness.
  8. Use your fingers to dimple the surface, drizzle with olive oil, and let rest for 20 minutes.
  9. Bake at 400°F (200°C) for 20-25 minutes until golden brown.
  10. Cool slightly, dust with powdered sugar, slice, and serve warm.
