Jalapeno Corn Nuggets

Crispy on the outside and tender on the inside, these Jalapeno Corn Nuggets deliver a spicy, flavorful twist on classic corn fritters perfect as a snack or appetizer.

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup buttermilk
  • 1 large egg
  • 1 cup fresh corn kernels (or frozen, thawed)
  • 1 jalapeno, finely chopped (seeds removed for less heat)
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons chopped green onions
  • Vegetable oil, for frying

Instructions

  1. In a medium bowl, whisk together cornmeal, flour, sugar, baking powder, salt, and black pepper.
  2. In another bowl, beat the egg with buttermilk until combined.
  3. Stir the wet ingredients into the dry ingredients until just blended.
  4. Fold in the corn kernels, chopped jalapeno, shredded cheddar cheese, and green onions.
  5. Heat about 1/2 inch of vegetable oil in a large skillet over medium heat.
  6. Drop spoonfuls of batter into the hot oil, flattening slightly with the back of the spoon.
  7. Fry for 2-3 minutes per side until golden brown and crispy.
  8. Transfer nuggets to a paper towel-lined plate to drain excess oil.
  9. Serve warm with your favorite dipping sauce.

Notes

For a milder flavor, remove seeds from jalapeno before adding; serve with a creamy ranch or spicy chipotle dip for an extra kick.
