Sweet and spicy Honey Sriracha Chicken Rice Bowls combine tender chicken with a flavorful sauce over fluffy rice, perfect for an easy and satisfying weeknight dinner.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts, sliced thinly
  • 1 cup jasmine rice
  • 2 tablespoons honey
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon vegetable oil
  • 1 cup steamed broccoli florets
  • 1/4 cup sliced green onions
  • Sesame seeds for garnish
  • Salt and pepper to taste

Instructions

  1. Cook jasmine rice according to package instructions and set aside.
  2. In a small bowl, whisk together honey, Sriracha, soy sauce, rice vinegar, garlic, and ginger to make the sauce.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add chicken slices, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
  4. Pour the honey Sriracha sauce over the chicken in the skillet and stir to coat evenly. Cook for another 2 minutes until sauce thickens slightly.
  5. Assemble the rice bowls by dividing cooked rice among bowls.
  6. Top each bowl with the honey sriracha chicken and steamed broccoli.
  7. Garnish with sliced green onions and sesame seeds before serving.

Notes

For extra crunch, add chopped peanuts or cashews as a topping. You can also swap jasmine rice with brown rice or cauliflower rice for a healthier twist.
