Honey Glazed Carrots Green Beans

A vibrant and sweet side dish featuring tender green beans and carrots glazed with a luscious honey sauce, perfect for complementing any meal.

  • 1/2 pound fresh green beans, trimmed
  • 1/2 pound carrots, peeled and sliced
  • 2 tablespoons honey
  • 1 tablespoon unsalted butter
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon fresh lemon juice (optional)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the carrots and cook for 3 minutes, then add the green beans and cook for an additional 2-3 minutes until both are tender-crisp.
  3. Drain and immediately rinse the vegetables under cold water to stop cooking; set aside.
  4. In a large skillet, heat olive oil and butter over medium heat until melted.
  5. Add the drained carrots and green beans to the skillet.
  6. Drizzle honey over the vegetables and sauté for 3-4 minutes, stirring frequently, until vegetables are glazed and heated through.
  7. Season with salt, pepper, and lemon juice if using, toss to combine, then remove from heat.
  8. Serve warm as a flavorful and healthy side dish.

Notes

For added crunch, sprinkle toasted almonds or pecans on top just before serving.
