Creamy and rich homemade mayonnaise made from simple natural ingredients, perfect for sandwiches, dressings, and dips.

  • 1 large egg yolk
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice or white vinegar
  • 1 cup neutral oil (such as canola or vegetable oil)
  • Salt, to taste
  • Freshly ground black pepper, to taste (optional)

Instructions

  1. Place the egg yolk, mustard, and lemon juice (or vinegar) in a mixing bowl and whisk together until well combined.
  2. Slowly begin to add the oil drop by drop while continuously whisking vigorously to emulsify the mixture.
  3. Once the mixture starts to thicken and emulsify, you can add the oil in a slow, steady stream while continuing to whisk until all the oil is incorporated and the mayonnaise is thick and creamy.
  4. Season with salt and freshly ground black pepper to taste. Whisk again to combine.
  5. Transfer the mayonnaise to a clean jar or container. Refrigerate and use within one week.

Notes

For a different flavor, try adding minced garlic for garlic aioli or a teaspoon of honey for a touch of sweetness.
