Ingredients

Scale
  • 1 1/2 cups whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup honey
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together whole wheat flour, all-purpose flour, brown sugar, baking soda, cinnamon, and salt.
  3. Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. In a small bowl, combine honey, milk, and vanilla extract. Pour into the flour mixture and stir until the dough comes together.
  5. Turn the dough onto a lightly floured surface and knead gently until smooth. Wrap in plastic wrap and chill for 30 minutes.
  6. Roll out the dough between two sheets of parchment paper to about 1/8-inch thickness.
  7. Cut dough into squares or rectangles using a pizza cutter or knife. Prick holes evenly over each cracker with a fork to prevent puffing.
  8. Transfer crackers to the prepared baking sheets and bake for 12–15 minutes, or until golden brown around the edges.
  9. Allow crackers to cool completely on a wire rack before serving or storing.

Notes

For extra flavor, sprinkle a little coarse sugar on top before baking or add a pinch of nutmeg to the dough.
