  • 1 medium onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 6 ounces egg noodles
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery; sauté until softened, about 5 minutes.
  2. Add garlic and cook for another minute until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Add egg noodles, dried thyme, and dried parsley. Cook according to noodle package instructions, usually 7-8 minutes.
  5. Stir in cooked shredded chicken and heat through for 2-3 minutes.
  6. Season with salt and pepper to taste.
