Grilled Mango Pineapple Chicken

  • 4 boneless, skinless chicken breasts
  • 1 ripe mango, peeled and diced
  • 1 cup pineapple chunks
  • 1/4 cup red bell pepper, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tbsp olive oil
  • 1 tsp honey
  • 1/2 tsp ground cumin
  • Salt and pepper, to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, lime juice, honey, ground cumin, salt, and pepper.
  3. Brush chicken breasts with the marinade and let sit for 10 minutes.
  4. Grill chicken for 6-7 minutes per side, until cooked through and internal temperature reaches 165°F (74°C).
  5. While chicken grills, combine mango, pineapple, red bell pepper, red onion, and cilantro in a bowl to make the salsa.
  6. Once chicken is done, top each breast with the fresh mango pineapple salsa and serve immediately.

Notes

For added heat, sprinkle a pinch of cayenne pepper in the salsa or serve with a side of spicy jalapeño salsa.
