  • 20 mini sweet peppers
  • 8 oz goat cheese, softened
  • 2 tbsp fresh chives, finely chopped
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice the tops off the mini peppers and remove seeds carefully, keeping the peppers intact.
  3. In a bowl, combine softened goat cheese, chopped chives, olive oil, and lemon zest. Mix well and season with salt and pepper.
  4. Stuff each mini pepper with the goat cheese mixture using a spoon or piping bag.
  5. Place stuffed peppers on a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes until peppers are tender and cheese is slightly golden.
  7. Remove from oven and cool slightly before serving.

Notes

For extra flavor, drizzle balsamic glaze over the stuffed peppers before serving or add chopped walnuts to the cheese filling for crunch.
