  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs

  • 2 tablespoons fresh parsley, chopped

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, combine Parmesan cheese, breadcrumbs, minced garlic, parsley, oregano, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each chicken breast first into the eggs, then coat thoroughly with the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat and sear the chicken breasts 2-3 minutes on each side until golden brown.
  6. Transfer the seared chicken breasts to the baking sheet and bake for 15-20 minutes, or until the chicken is cooked through and juices run clear.
