  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 5 garlic cloves, minced
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • ½ cup chicken broth
  • 1 tablespoon fresh lemon juice
  • Chopped fresh parsley, for garnish

Instructions

  1. Season the chicken thighs generously with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Place chicken thighs skin-side down in the skillet and cook for 6-7 minutes until the skin is crispy and golden brown.
  4. Flip the chicken thighs and cook for another 5 minutes.
  5. Reduce heat to medium, add the butter, minced garlic, and thyme to the skillet.
  6. Spoon the melted garlic butter over the chicken and cook for 2 minutes until fragrant.
  7. Add chicken broth and lemon juice to the skillet, scraping up any browned bits from the bottom.
  8. Simmer for 5 minutes or until the chicken is cooked through and the sauce has slightly reduced.
  9. Garnish with chopped parsley and serve hot.
