Garlic Butter Beef Bites with Creamy Mashed Potatoes

  • 1 lb beef sirloin, cut into bite-sized pieces
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 lb russet potatoes, peeled and cubed
  • 1/4 cup heavy cream
  • 1/4 cup milk
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Place peeled and cubed potatoes in a pot of salted water and bring to a boil. Cook until potatoes are fork-tender, about 15 minutes.
  2. Drain the potatoes and return them to the pot. Add heavy cream, milk, 2 tablespoons of butter, salt, and pepper. Mash until creamy and smooth. Cover and keep warm.
  3. Meanwhile, heat olive oil in a large skillet over medium-high heat.
  4. Add beef bites to the skillet in a single layer. Sear until browned on all sides, about 3-4 minutes.
  5. Reduce heat to medium-low. Add remaining 2 tablespoons of butter and minced garlic to the skillet.
  6. Stir frequently, cooking for another 2-3 minutes until garlic is fragrant and beef is cooked through.
  7. Season beef bites with salt and pepper to taste.
  8. Serve the garlic butter beef bites over or alongside the creamy mashed potatoes. Garnish with chopped fresh parsley if desired.

Notes

For extra flavor, you can add a splash of white wine to the skillet after searing the beef to deglaze the pan before adding garlic and butter.
