French Onion Soup

A classic French Onion Soup featuring caramelized onions simmered in rich beef broth and topped with toasted baguette slices and melted Gruyère cheese.

  • 4 large yellow onions, thinly sliced
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp sugar
  • 1/4 cup dry white wine
  • 8 cups beef broth
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and freshly ground black pepper, to taste
  • Baguette slices, toasted
  • 1 1/2 cups grated Gruyère cheese

Instructions

  1. In a large pot, melt butter with olive oil over medium heat.
  2. Add sliced onions and cook, stirring frequently, until soft and caramelized, about 30-40 minutes.
  3. Stir in minced garlic and sugar; cook for 2 more minutes.
  4. Deglaze the pot with white wine, scraping up any browned bits, and cook until wine is mostly evaporated.
  5. Add beef broth, thyme, and bay leaf; bring to a boil and then reduce to a simmer for 30 minutes.
  6. Remove thyme sprigs and bay leaf. Season with salt and pepper to taste.
  7. Preheat the broiler. Ladle soup into oven-safe bowls, top each with toasted baguette slice and a generous amount of Gruyère cheese.
  8. Place bowls under the broiler until cheese is bubbly and golden brown, about 3-5 minutes. Serve hot.

Notes

For a vegetarian version, replace beef broth with vegetable broth and use a vegetarian-friendly cheese.
