Cucumber Feta Salad

A refreshing cucumber feta salad combining crisp cucumbers, creamy feta cheese, and a zesty lemon dressing, perfect for a light and healthy side dish.

Ingredients

  • 2 large cucumbers, thinly sliced
  • 1 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons olive oil
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the sliced cucumbers, crumbled feta cheese, and red onion.
  2. In a small bowl, whisk together the lemon juice, olive oil, chopped dill, salt, and pepper.
  3. Pour the dressing over the cucumber mixture and toss gently to combine.
  4. Chill in the refrigerator for 15-20 minutes before serving to allow flavors to meld.
  5. Serve cold as a refreshing side salad.

Notes

For extra crunch, add some toasted pine nuts or sliced almonds just before serving.
