Creamy Tuscan Chicken is a rich and flavorful dish featuring tender chicken breasts in a luscious sauce with sun-dried tomatoes, garlic, and spinach, perfect for a hearty Italian-inspired dinner.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium heat and cook chicken until golden and cooked through, about 5-7 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  4. Add sun-dried tomatoes and cook for another 2 minutes.
  5. Pour in chicken broth and heavy cream, stirring to combine.
  6. Bring the sauce to a simmer, then stir in Parmesan cheese until melted and sauce thickens.
  7. Add fresh spinach and cook until wilted, about 2 minutes.
  8. Return the chicken to the skillet, spooning sauce over the top, and simmer for 3-5 minutes to meld flavors.
  9. Serve hot, garnished with additional Parmesan if desired.

Notes

For a lighter version, substitute heavy cream with half-and-half and use reduced-fat Parmesan cheese. Serve with pasta or crusty bread to soak up the delicious sauce.
