Cranberry Orange Bread with Glaze

This moist and flavorful cranberry orange bread combines tart cranberries and zesty orange with a sweet glaze, perfect for breakfast or an afternoon snack.

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon orange zest
  • 1 cup fresh cranberries
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup orange juice
  • 1 teaspoon vanilla extract
  • For the glaze:
    – 1 cup powdered sugar
    – 2 tablespoons orange juice

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and orange zest.
  3. In a large bowl, beat melted butter and sugar until combined.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in orange juice and vanilla extract.
  6. Gradually add dry ingredients to wet ingredients, mixing just until combined.
  7. Fold in fresh cranberries gently.
  8. Pour batter into prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let bread cool in the pan for 10 minutes, then transfer to a wire rack.
  11. Mix powdered sugar and orange juice to make glaze; drizzle over cooled bread before serving.

Notes

For an extra burst of flavor, sprinkle chopped walnuts into the batter or serve slices with a smear of cream cheese.
