This cranberry goat cheese log is a creamy and tangy appetizer that’s perfect for festive gatherings, combining smooth goat cheese with sweet-tart cranberries and a crunchy nut coating.

  • 8 oz goat cheese, softened
  • 1/2 cup dried cranberries, chopped
  • 1/4 cup chopped pecans or walnuts
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme, chopped (optional)
  • Crackers or sliced baguette, for serving

Instructions

  1. In a medium bowl, mix softened goat cheese, chopped dried cranberries, honey, and thyme until well combined.
  2. Shape the mixture into a log about 6 inches long on a piece of plastic wrap.
  3. Roll the log in the chopped nuts, pressing gently to adhere the nuts to the cheese.
  4. Wrap the log tightly in plastic wrap and refrigerate for at least 1 hour to firm up.
  5. Before serving, remove the plastic wrap and place the cheese log on a serving platter.
  6. Serve with crackers or sliced baguette.

Notes

For a festive touch, garnish the log with additional fresh thyme or sprinkle with a little extra chopped cranberries before serving.
