Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 8 oz bacon, diced
  • 1 cup pearl onions, peeled
  • 8 oz cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 cups dry red wine (Burgundy preferred)
  • 1 cup chicken broth
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a large Dutch oven, heat olive oil over medium heat. Brown the chicken thighs on all sides, then remove and set aside.
  3. Add diced bacon to the pot and cook until crisp. Remove with a slotted spoon and set aside.
  4. Add pearl onions and mushrooms to the bacon fat; sauté until softened and lightly browned. Add garlic and cook for 1 minute.
  5. Stir in tomato paste and cook for 2 minutes. Sprinkle flour over vegetables and stir to coat.
  6. Gradually pour in red wine and chicken broth, scraping up any browned bits from the bottom of the pot.
  7. Return chicken and bacon to the pot. Add thyme, bay leaf, and adjust seasoning with salt and pepper.
  8. Bring to a simmer, cover, and cook on low heat for 40-45 minutes until the chicken is tender.
  9. Remove thyme sprigs and bay leaf. Garnish with fresh parsley before serving.
