Copycat Little Debbie Valentine Cakes

Recreate the beloved Little Debbie Valentine Cakes at home with this easy copycat recipe featuring soft chocolate cakes layered with creamy marshmallow filling and a vibrant pink coating.

  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup marshmallow fluff
  • 2 cups powdered sugar
  • 1-2 tablespoons milk
  • 1 teaspoon vanilla extract (for frosting)
  • Pink food coloring
  • Colored sprinkles (optional, for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  5. Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour mixture. Mix until just combined.
  6. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool completely in the pan, then cut into small rectangular pieces, about 3×2 inches.
  8. To make the marshmallow filling, mix marshmallow fluff with 1 teaspoon vanilla extract until smooth.
  9. Spread a generous layer of marshmallow filling on half of the cake rectangles, then sandwich with remaining pieces.
  10. For the pink coating, mix powdered sugar, a few drops of milk, vanilla extract, and enough pink food coloring to make a smooth glaze.
  11. Dip the cake sandwiches into the pink glaze, letting excess drip off, then place on a wire rack.
  12. Decorate with colored sprinkles while the glaze is still wet, if desired. Let the glaze set completely before serving.

Notes

For an extra festive touch, refrigerate the cakes for 30 minutes after glazing to help the coating firm up quickly and maintain their shape.
