  • 1 cup cooked white rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, sliced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin

Instructions

  1. In a medium skillet, heat olive oil over medium heat. Add shredded chicken, chili powder, cumin, salt, and pepper; cook for 3-4 minutes until heated through and coated with spices.
  2. In a bowl, layer the cooked rice as the base.
  3. Top rice with black beans, corn, and seasoned chicken.
  4. Pour warm enchilada sauce evenly over the bowl.
  5. Sprinkle shredded cheddar cheese on top.
  6. Microwave or bake at 350°F (175°C) for 5-7 minutes until cheese is melted.
  7. Garnish with diced tomatoes, green onions, cilantro, and avocado slices.

Notes

For extra heat, add sliced jalapeños or a dollop of spicy sour cream. Serve with lime wedges for a fresh citrus kick.
