  • 1 tablespoon olive oil
  • 1 cup diced cooked chicken
  • 1 cup diced ham
  • 1/2 cup diced onion
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 cup shredded Swiss cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Stir in flour and cook for 1 minute, stirring constantly.
  3. Gradually whisk in chicken broth until smooth.
  4. Bring to a simmer and add chicken and ham.
  5. Reduce heat and simmer for 10 minutes.
  6. Stir in milk and heavy cream. Heat through, but do not boil.
  7. Remove from heat and stir in Swiss cheese until melted.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley, if desired. Serve hot.

Notes

For a richer flavor, use Gruyere cheese instead of Swiss. You can also add a splash of dry sherry or white wine to the soup while simmering.
